Coconut Milk Cake with Rum & Coconut Sauce

During the week, I was going through one or two of my books, came across what looked like a really lovely recipe for Pina Colada Cupcakes.  And, yes, Dear Readers, it was yet another recipe which had either been untried by the author, or had been misprinted.

    Funnily enough this is the first thing I want to bake out of Marian's book but just haven't got around to it yet. I made pina colada cupcakes from Hummingbird Bakery recently & they were a-may-zing, so have a look there if you have 'Cake Days'.

      Thanks for the head-up, Adrienne. The coconut milk cake is really lovely. You should try it :) I have "Cake Days", and should have looked at it first. Will do theirs this week.
