  1. My mother made a cake with potato years ago - only remembered it now and from what I can remember it was very moist! After all it is a starch.....

    1. Indeed it is, Maggie, and you can't taste the potato in it at all.

    1. Thank you, Paula. It tastes great, and you cannot tell there are potatoes in it. The daisies are from Dr. Oetker (edible wafers), handy to have :)

  5. Colette, this cake sounds very interesting. Will have to try it, need to get my hands on another potato ricer first though, I threw my last one out in a fit of rage a while ago.

    1. Thanks, Adrienne. A fork will do a good enough job too. Just give it a thorough mashing :)

  6. I haven't tried potatoes in a cake, but I added them into a bread, so it's almost the same thing :) I don't own potato ricer (actually I didn't know this name at all), but I do love my potato masher attachment to my blender :)

    1. Yes, exactly the same idea, Magda. A potato ricer is like a large version of a garlic press, but a fork will do also.

  7. Cute cute potato cake indeed. We have a cheesy potato scone recipe that calls for raw grated potato and it produces a lovely moist scone too. Love getting the veg into the sweets for the kids.

    1. Aw, thank you, Móna, it was certainly a surprise for me, and a great addition to a cake, or, indeed a scone. Will be hunting down more potato recipes!

    1. Thank you for your comment, Catríona. You cannot taste the potato whatsoever! Lots of folks see potato and think it will be awful, but it's really moist and very surprising.
